I found these beautiful colored carrots at our local farmers market. It’s really nice not only to have something taste incredibly good but to look beautiful too…and these did.
Serve them whole or cut up, it doesn’t matter. All you need is fresh carrots, olive oil, salt, pepper and olive oil…cook for ten minutes in the oven…so simple…so good.
Before serving, drizzle balsamic vinegar over the top.
Sweet, tender and juicy…a perfect side to any dish.
